Spice Trails - Vegetarian/Seafood

There’s a reason why Kerala is known as God’s Own Country! The varieties and flavours offered by the cuisine of the region seems to be one of the main reasons for the tag. Surrounded by sea, the seafood is the best, couple that with the local spices and coconut, you know you have a winner on hand. Besides seafood, Kerala is also a good source of vegetables, rice, coconut, curry leaves, and tamarind. For all those who think Kerala food is about idlis, dosas, and vadas, this authentic dining experience will be an eye-opener.

We will take you for the shopping for dinner ingredients at a local market and will show how to spot the fresh fish, and determine if produce is ripe and my mother will also help you to cook a couple South Indian recipes (which you will be excited to cook at home - they will be healthy and so tasty!).

We will begin with an introduction to spices and ingredients used in our cooking. I will show you how cook Thoran (A seasonal vegetable made with grated coconut with a tempering of curry leaves) and Kerala-style Fish Fry (Fresh fish marinated with Kerala homemade spice mix and fried till crispy brown the ingredients are the secrets of my great grandmother). Once done, we will move towards the dining area and enjoy the some Kerala classics on a banana leaf in a traditional manner.

The whole experience can last for about 2-3 hours. Please Note - This is not a professional cooking class but rather an opportunity to cook and dine with a local home-chef. The experience will be as much about the stories around the food and local culture, as it would be about the meal itself.
